I have (finally) started to master the piping bag (and couldn’t be happier)!

I will let you into a little secret….. I have been trying for what feels like forever to master the art of piping icing! I have wanted to be able to recreate those pretty little peaks and roses for so long and have tried and failed endless times.

I was speaking to one of my friends at work about yet another disastrous attempt when she told me about a fail- proof recipe for buttercream which she uses for her piped icing. She wrote it down for me and off I went (not feeling too hopeful to be fair)!

Buttercream recipe – 225g sieved icing sugar, 85g butter, 1-2 tbs milk and a few drops of vanilla essence.

1 – Mix all the ingredients into a large bowl until smooth. Make sure that it is thoroughly mixed to ensure it will go through the nozzle of the piping bag. I also added  a little cocoa powder to give a chocolate flavour to the icing!

2-Use different nozzles to create different effects. Make sure you wait until your cakes are completely cool or the icing will just melt! (I’ve done this too)!

I was so shocked that it worked! I was jumping around my kitchen in sheer happiness that I had finally managed to use the piping bag without it being a huge mess! I cannot wait to try out more using different nozzles! They went down an absolute treat and the kids had a go using the bag too! A fun filled baking session!

Pitta bread pizzas!

One thing which my kids love doing is helping to cook their own meals! I am always on the lookout for simple, quick food ideas which the kids can get involved with. One of our favourite things is Pitta Bread Pizzas! These are so ridiculously simple that even young kids can do the majority themselves, and they actually taste really, really good!

All you need is – pitta breads, tomato puree, cheese (and other things for toppings – we used ham and tomatoes).

Begin by spreading out the tomato puree onto the pitta bread. Make sure the bread is covered or it will burn). Then cover with grated cheese. It is completely up to you how much prep beforehand that you let your kids do. My daughter is now at an age where she loves and is quite capable of grating, chopping foods etc. It really builds kids confidence to allow them that little bit of independence, and will develop their cooking skills greatly.

Next choose which toppings you would like. We used a mix of ham, cheese and tomatoes!

Next pop them in the oven for approximately 15 minutes or until the cheese has melted. They are super yummy served with fresh salad!

(Now you must forgive me at this point as I completely forgot to take photos of the finished pizzas – I’m so sorry! We were in too much of a rush to eat them)! Please trust me when I say they looked and tasted delicious!

A really quick, easy meal to make with the kids. The confidence the kids get from helping to make their own (and Mum and Dads!) food is brilliant!

Eeek! It’s a monster!

I got busy with the kids fruit snacks again the other day and decided to make some edible monster faces! (There’s nothing better than destroying monsters made from fruit right?!)

I used banana for the monsters hair, strawberries and raisins for the eyes, a grape nose and melon and raisins to form the mouth! All the kids ate their fruity faces super fast and even had seconds!

Berry face!

I have been getting a little creative with the kids snack time again! I thought I would mix up my daughter’s snack this morning and decided to turn her fruit into a cute berry face.

I used raspberries for the hair, cherries for the eyes, a strawberry for the nose and pomegranate seeds for the mouth! My daughter loved her fruity face and it disappeared super fast. I find it so much easier to get the kids eating healthy just by having a little fun with it!

The Very Hungry Caterpillar – a snack!

If you have been following my blog for a while you will know that I love getting creative with food! It helps encourage my kids to eat well, and really helps fussy eaters to try new foods. Take a look at my food ideas page for inspiration on encouraging kids to eat healthier and for family food ideas and recipes.

For snack time this morning I decided to make my own version of The Very Hungry Caterpillar for my little ones to munch on! I used cucumber slices for the catepillar’s body, a strawberry slice for his head and grape pieces as the antennae and mouth. I also added raspberries to form the ground and some more strawberries as butterflies.

The kids loved their story themed snack and even asked for more. A fantastic way to encourage kids to eat!

A dino snack!

My five year old son loves dinosaurs at the moment so I thought it would be a cute idea to turn his snack into something of the dinosaur variety! (You can see my other food ideas for kids here)!

I used cucumber to make the dinosaurs body, raspberries for his eye and for the ground, and satsuma segments and a raspberry for a sun.

Fruity fish!

My little boy was feeling a little hungry the other morning so off I went to the kitchen to prepare him a snack. I decided to make him a fruity fish to add a little fun to his snack time!

I used carrots as the body, cucumber and grapes for the eye, cucumber seaweed and grapes for bubbles.

My Daughters Sticky Jam Cake!

My daughter loves baking and as she gets older she is starting to tweak and adapt recipes so that they suit her own personal tastes. I love that she has her own ideas when baking and that she doesn’t feel she has to strictly follow recipes.

She decided to make her own recipe for jam cake the other day and I thought I would share it with you all (with her permission of course)! Be warned – this is a pretty sticky cake! She has a sweet tooth like most kids!

Recipe for Sticky Jam Cake – 125g butter, 200g self raising flour, 30g icing sugar, 3/4 tsp salt, 6 eggs, 1 tsp vanilla extract, 1 tbs cold water, 230g berry jam (we used strawberry), 400g granulated sugar.

1 – Preheat oven to 180c and grease a baking tin. (Ignore that my daughter is greasing two tins, she was making  a cake for a friend too)!

2 – Put the butter into a mixing bowl and mix until creamy. Then add 150g of the flour, the icing sugar, water, vanilla and half teaspoon of salt. Mix until you have a ball.

3 – Put the ball into the tin and press it down to form an even layer covering the tin bottom. Refrigerate for 10 minutes.

4 – Once chilled, bake for approximately 15 minutes. Then let it cool completely. Reduce the oven temperature to 170c.

5 – Once the base is cooled, spread the jam over it evenly.

6 – Mix the eggs, sugar, remaining flour and the remaining salt in a bowl, until smooth.

7 – Pour the egg mixture over the base and spread it out so that it is even.

8 – Put into the oven until the top is set. This usually takes about 30 minutes. Once cooked, let it cool completely, remove from tin and then serve!

My daughter served hers with strawberries to complement the jam flavour. Raspberries would also work brilliantly if you use raspberry jam.

This is a super delicious cake which is a family favourite in our home, thanks to my wonderful baking daughter! A lovely weekend treat!

Fruity flower!

I got creative again today at snack time! My daughter wanted some strawberries so I thought I would make them extra fun for her! I love making food fun for my kids. It really helps kids to try new foods and to eat well.

I decided to turn her fruit snack into a fruity flower, complete with a bumblebee too! I used a banana slice for the centre of the flower and strawberry slices for the petals. I also added cucumber sticks to make the stem and leaves. For the bumblebee I used banana slices with raisins and popped on some strawberry wings.

My daughter loves her fun snacks and this has been one of her favourites yet!
